How to Grow Organic French Thyme Seeds (Thymus vulgaris):
French thyme is a sun-loving perennial herb, but it starts slowly from seed. Start indoors 6–8 weeks before last frost (or at the start of your cool season in hot climates). Use a light, well-draining seed mix and sow seeds on the surface or barely cover with a thin dusting (1–2 mm) because they need light to germinate. Mist to keep the surface evenly moist, not wet, and keep temps around 18–24°C (65–75°F). Germination is usually slow and uneven, often 14–28 days. Once seedlings have a few true leaves, pot them up gently and give strong light. Transplant outdoors when nights are mild, spacing plants 20–30 cm (8–12 in) apart. Choose full sun and sandy/loamy, fast-draining soil—thyme hates soggy roots.
How to Care for Organic French Thyme:
Water regularly only while plants establish; after that, thyme prefers the dry side, so let the topsoil dry between waterings. Overwatering is the #1 killer. Fertilizer should be light—too much nitrogen makes soft, less flavorful growth—so a little compost in spring or a half-strength balanced feed every 4–6 weeks in pots is plenty. Pinch tips to keep plants bushy, and trim lightly after flowering to prevent woodiness. Harvest anytime once established, taking sprigs from the top and avoiding cutting deep into old woody stems. In humid climates, give extra airflow to prevent mildew. Thyme tolerates heat and moderate drought well, and in mild winters it stays evergreen; in colder zones it may die back slightly and regrow in spring.
