Tiger’s Eye Bean Seeds (Phaseolus vulgaris) produce productive bush-type plants with occasional short runners. Also known as Pepa de Zapallo, this South American heirloom develops beautiful golden-yellow to amber beans marked with deep red or maroon swirls resembling a tiger’s eye stone. The thin-skinned beans have a rich, slightly nutty flavor and a smooth, buttery texture when cooked. They are excellent for soups, stews, refried beans, bean dips, casseroles, and fresh-shell bean dishes.

Planting Season

Best planted in: Late Spring & Early Summer (Warm-Season Crop)

Sow directly outdoors after all danger of frost has passed and the soil temperature has reached at least 60°F (16°C). Planting in cold, wet soil can result in slow germination or rotting seeds.

How to Grow Tiger’s Eye Bean Seeds

Direct sow the seeds outdoors because bean plants have delicate roots and generally do not transplant well.

Choose a location receiving at least 6–8 hours of direct sunlight each day.

Grow in fertile, loose, well-drained soil enriched with compost or aged organic matter.

Sow seeds approximately 1 inch deep.

Space seeds 2–4 inches apart in rows spaced 18–24 inches apart.

Thin seedlings to approximately 4–6 inches apart once they are well established.

Keep the soil evenly moist but never waterlogged during germination.

Maintain soil temperatures between 60–85°F (16–29°C), with temperatures near 80°F (27°C) being ideal for rapid germination.

Seeds typically germinate within 6–14 days, depending on soil temperature and moisture.

Tiger’s Eye is primarily a bush bean, although some plants may develop short runners. Tall trellising is usually unnecessary, but light support can help heavily loaded plants remain upright.

How to Care for Tiger’s Eye Bean Plants

Water deeply and consistently, providing approximately 1 inch of water per week when rainfall is insufficient.

Maintain steady moisture during flowering and bean development to encourage full, well-formed seeds.

Water at the base of the plants and avoid frequently wetting the foliage, which can increase the risk of fungal disease.

Apply compost before planting, but avoid fertilizers containing excessive nitrogen. Too much nitrogen encourages leafy growth while reducing flower and pod production.

Mulch around the plants after the soil has warmed to conserve moisture, suppress weeds, and protect the shallow root system.

Remove weeds carefully without cultivating deeply around the plants.

For fresh shell beans, harvest when the pods are fully filled and the beans inside are plump but still tender.

For dry beans, leave the pods on the plants until they become tan, dry, and papery and the beans rattle inside. If wet weather is expected, harvest the pods and finish drying them in a warm, well-ventilated location.

Tiger’s Eye beans typically mature in approximately 80–90 days after sowing.
