Sprouting & Microgreen Seeds – Mung Bean & Organic Alfalfa Seeds include two popular varieties for fresh indoor growing, each with a distinctly different texture and flavor. Mung Bean Sprouting Seeds (Vigna radiata) produce thick, crisp white sprouts with a mild, slightly sweet flavor and juicy crunch, making them ideal for stir-fries, soups, noodles, spring rolls, and Asian-style dishes. Organic Alfalfa Sprouting Seeds (Medicago sativa) produce fine, delicate sprouts with small green leaves and a mild, fresh, slightly nutty flavor that works especially well in salads, sandwiches, wraps, and smoothies.

The main difference between these two types is size, texture, and harvest style. Mung Bean develops thicker, crunchier sprouts that are often cooked, while Alfalfa produces lighter, leafy sprouts that are commonly used fresh. Both grow quickly indoors without garden soil and are excellent for year-round sprouting.

Planting Season

Both Mung Bean and Alfalfa can be sprouted indoors at normal room temperatures, ideally around 65–75°F (18–24°C).

For microgreens, seeds can also be grown year-round indoors in shallow trays with adequate light and airflow.

How to Grow Mung Bean & Organic Alfalfa Sprouting Seeds

Rinse seeds thoroughly before soaking.

Soak Mung Bean seeds for approximately 8–12 hours. Soak Alfalfa seeds for approximately 4–8 hours.

Drain completely and place the seeds in a clean sprouting jar, tray, or other suitable sprouting container.

Rinse and drain thoroughly 2–3 times per day. Avoid leaving standing water around the seeds.

Keep Mung Bean sprouts mostly away from strong light for thicker, pale stems.

Alfalfa sprouts can be exposed to indirect light near the end of the growing period to encourage small green leaves.

Mung Bean sprouts are generally ready in approximately 3–5 days.

Alfalfa sprouts are generally ready in approximately 4–6 days.

For microgreens, sow seeds evenly over moist growing medium and provide bright indirect light after germination. Harvest when the seedlings have developed their first leaves.

How to Care for Mung Bean & Organic Alfalfa Sprouts

Use clean containers, clean water, and good airflow throughout the sprouting process.

Drain thoroughly after every rinse to reduce excess moisture and spoilage.

Keep sprouts away from excessive heat and direct sunlight.

Mung Bean sprouts should be harvested when stems are crisp and have reached the preferred length.

Alfalfa sprouts are ready when fine white stems develop small green leaves.

After harvesting, rinse well, drain thoroughly, and refrigerate promptly.

For best quality, consume fresh sprouts within several days.

Because raw sprouts can sometimes carry foodborne bacteria, people at higher risk of foodborne illness should eat sprouts thoroughly cooked rather than raw.
