How to Grow Organic Rosemary Seeds (Rosmarinus officinalis / Salvia rosmarinus):
Rosemary from seed is totally doable, just slow—so patience is part of the deal. Start seeds indoors 10–12 weeks before your last frost (or at the start of the cool season in hot climates). Use a light, well-draining seed mix and sow very shallow, about 2–3 mm (⅛ in) deep or barely covered. Mist to keep the surface evenly moist but never wet, and keep temperatures warm (around 21–24°C / 70–75°F). Germination is often uneven and can take 14–42 days, sometimes longer. As soon as seedlings appear, give very bright light 12–16 hours/day and good airflow. When seedlings have several true leaves and are sturdy, pot them up into individual containers. Transplant outdoors only when weather is mild and nights are warm; place them in full sun and sandy-loam, fast-draining soil. Space plants about 45–60 cm (18–24 in) apart.
How to Care for Organic Rosemary:
Rosemary loves sun and hates soggy roots. Water regularly only while plants establish; after that, water deeply but infrequently, letting the top few cm of soil dry out between waterings. In pots, make sure there are drainage holes and don’t leave water in saucers. Fertilizer should be light—too much nitrogen makes soft, weak, less aromatic growth—so a small compost top-dress in spring or a half-strength balanced feed monthly in containers is plenty. Pinch tips to encourage bushiness, and prune lightly after flowering to keep it compact; don’t cut deep into old woody stems. Harvest anytime once plants are established, taking no more than one-third of the plant at a time; flavor is strongest right before bloom. Watch for powdery mildew or root rot in humid/wet conditions—good airflow, full sun, and dry-leaning soil prevent most problems. In colder climates, protect from hard freezes or grow in pots so you can move it to shelter; in mild climates it stays evergreen and productive for years.
